Situated on the entresol level of the hotel, The Pompadour by Galvin is open for dinner Tuesday to Saturday, from 6:30pm to 10pm and for lunch on Fridays.
Originally named ‘The Pompadour Restaurant’, this elegant Edinburgh eatery first opened in 1925 in the heyday of steam railway travel, catering to the country’s rich and famous for whom Waldorf Astoria Edinburgh - The Caledonian was the hotel of choice.
The restaurant takes its name from the celebrated Madame de Pompadour, the favourite mistress of King Louis XV of France, at whose behest Madame de Pompadour was installed in the magnificent Palace at Versailles.
The Pompadour’s extravagant, listed interior décor reflects the sumptuousness of the royal court of the day and the restaurant has long enjoyed the reputation of having the best table in Edinburgh with impressive views overlooking Princes Street and Edinburgh Castle through the panoramic arched windows.

Few chefs have done more to revitalise and perpetuate the traditions of classical French cuisine than Chris and Jeff Galvin. In the course of their illustrious careers, from commis chefs to restaurateurs, they have honed their craft in some of the world’s most famous restaurants, working alongside true titans of the culinary world and amassing an enviable haul of industry awards, including two Michelin stars, ten AA Rosettes, and the AA Chefs' Chef of the Year award in 2011.

The à la carte and tasting menus at The Pompadour by Galvin are imbued with the brothers’ ethos of peerless style and sophistication and feature the best in traditional French haute cuisine. Classic French-inspired dishes and a selection of Scottish and English favourites are prepared using only the finest, locally sourced, seasonal ingredients derived from the Galvins’ network of Scottish suppliers, growers, farmers and fishermen.
A specially selected array of French regional wines has been chosen by the highly experienced sommelier to complement each of the menu selections. The restaurant also features a private speciality cocktail salon for pre-dinner apéritifs or coffee and digestifs after dinner, with spectacular views of the castle and cityscape.
